Today I'm making something simple and delicious. Butternut squash + sage oil pastause the following materials available at Elm City Market.
material
1 small butternut squash (diced)
1/2 cup caramelized onions
1 1/2 tablespoons sage oil (2 cups sage oil, 10 fresh sage leaves)
2 pounds of bowtie pasta
1/2 cup finely grated Parmesan cheese
Herb mix for garnish
Season to taste with salt and freshly ground pepper.

- Preheat oven to 425°F
- Place the squash in a large bowl and toss with the olive oil, salt, and pepper. Spread on a baking sheet lined with parchment paper and bake in the upper half of the oven until the pumpkin is soft.
- Add olive oil and onion to a frying pan and heat over medium heat. Fry until golden brown.
- While the vegetables are cooking, bring a large pot of salted water to a boil and cook the pasta for 8 minutes, until tender.Drain and wash the pasta and transfer to a large bowl.
serving bowl. - Sage Oil – (Heat EVOO and sage on low heat)
- Add the pumpkin and onions to the pasta, then pour the sage oil into the bowl and toss to coat the pasta and vegetables.
- Top with Parmesan cheese. Finish with a little more salt, freshly ground pepper, and herb mix.
