5 Persian cucumbers
1/2 teaspoon salt
1/2 tablespoon sesame oil
3/4 tablespoon light soy sauce
1 tablespoon sugar
3/4 tablespoon rice vinegar
1 tablespoon chili oil
1/2 tablespoon sesame seeds
Instructions
Wash one end of the cucumber and cut it diagonally.
Continue slicing diagonally. The slices should look oval rather than circular.
(Please adjust the thickness according to your preference.)
Place in a bowl and sprinkle with 1/2 teaspoon salt.
Mix well and chill in the refrigerator for at least 20 minutes to evaporate moisture.
Drain the water and wash the cucumbers for about 10 seconds before putting them back in.
Return to bowl/container.
Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, and sesame seeds.
Stir until well mixed and enjoy.
